- Method for Using and Storing Sausage Casings.Before using the casing rinse the the casings well under running water at home temperature.Make a solution adding 5 to 10%vinegar or acetic acid and 90% of water and soak the casing in it, let it rest for 30 to 45 minutes.The casing will be ready to use after this process you can rinse the casings or use it as it is.If there are any leftovers you can re-salt them according to the the ratio of the casings and keep it in the refrigerator.Repeat the rinsing and soaking step when you want to reuse the casings afterwards.
