- Bring the batter to room temperature. For dosas, add little water (around 60ml for 600g batter) to get your desired consistency. Mix well with your bare hands for 1-2 mins to invoke the magic. After tawa has cooled down properly, gently spread the batter then put the flame from medium to high to cook it. After making dosa, keep the tawa away from the flame and wipe it with a wet cloth to cool it down. For idli, mix well and use batter directly. Don't completely fill the mould leave space to become fluffy and soft
